The best dough recipes for pies

Dough preparation

How to cook the dough for pies? There are lots of options, but how to choose the right one? Only by trial and error. But to facilitate and speed up this process, use one of the options below.

Option One

This is the dough for yeast pies. List of required ingredients:

  • 300 ml of milk;
  • 1 packet or one and a half teaspoons of active (fast-acting) dry yeast;
  • three glasses of wheat flour;
  • two or three tablespoons of sugar;
  • 50 ml of vegetable oil;
  • one third or half teaspoon of salt.

Description of the cooking process:

  1. Heat the milk to about 38 or 40 degrees, add salt, a tablespoon of flour, a tablespoon of sugar and yeast. Leave the mixture for half an hour, so that the yeast is activated and begin to grow.
  2. When the opara rises, enter into it the remaining flour, butter and sugar.Stir everything to make a rather soft and elastic dough. Cover it with a plastic bag or cling film and leave for forty to fifty minutes.
  3. Next, beat the dough with your hands and remove for another forty minutes.
  4. Divide the total mass into pieces and proceed to the formation of pies.

Option Two

This is also a recipe for yeast dough, but it turns out to be more gentle and airy. To make it you will need:

  • 700-800 grams of flour (see the consistency of dough);
  • 400 ml of sour cream;
  • three eggs;
  • three tablespoons of sugar;
  • about 80-90 ml of water;
  • 1 packet of dry fast yeast.

Cooking method:

  1. Water warm to about 38-39 degrees, dissolve the yeast in it and leave for 15-20 minutes to start swelling.
  2. Beat eggs with sugar using a mixer.
  3. Next, add sour cream to the egg mixture and mix everything thoroughly. Pour into the composition of the swollen yeast and stir everything again.
  4. Gradually begin to introduce flour and knead the dough. When it becomes uniform and elastic, wrap it with a film and leave it for an hour to "rest", and then use it for the intended purpose.

Option Three

If you are going to fry the pies, then an excellent dough for them can be cooked on kefir. Here's what you need for this:

  • 400 grams of flour;
  • 300 ml of kefir;
  • 1 tablespoon of sugar (or a little more if you plan to cook sweet cakes);
  • half a teaspoon of salt;
  • teaspoon of soda;
  • three or four tablespoons of vegetable oil.


  1. Kefir in advance, get out of the refrigerator so that it is at room temperature. Add soda, sugar, one tablespoon of vegetable oil and salt to it. Mix everything well and leave the composition for twenty minutes, so that the yogurt begins to quench the soda (you will understand this by the bubbles that form).
  2. Gradually add flour to the mixture, first stirring everything with a spoon and then with your hands. At the end, enter the remaining oil. Knead the dough so that it does not stick to your hands and turn out soft and elastic.
  3. Cover the dough with a film and leave for half an hour, and then proceed to cooking the pies.

Fourth option

Airy and gentle patties will be obtained if you use for their preparation puff pastry. Although it is not easy to cook, but the process is worth the result.

List of required ingredients:

  • three glasses of flour and 50 grams for butter;
  • one egg;
  • one tablespoon of vodka;
  • a quarter of a teaspoon of salt;
  • three teaspoons of 9% vinegar;
  • water (the amount you determine in the cooking process);
  • 200 grams of butter.


  1. Egg break into a glass, the volume of which is 250 grams (another capacity is suitable, but the same volume).
  2. Add the vodka and water to the egg, so that the total volume of the mixture is 250 milliliters.
  3. Now pour the resulting composition into a bowl, add vinegar and mix everything quickly and actively, or better whisk with a mixer.
  4. Add salt and stir to dissolve completely.
  5. Start to add the flour portionwise and knead the dough. As a result, it should be fairly dense and homogeneous. First, you can knead it in a bowl, and then on the table, occasionally scribing.
  6. Wrap the dough in film and leave for an hour at room temperature.
  7. Next, proceed to the preparation of butter. It should be chilled, so keep it in the refrigerator. Cut it into cubes and put them in a bowl of a blender or food processor. Add flour and mix the ingredients until smooth.
  8. Put the finished oil mass on the parchment, cover the top with parchment and roll it into a rather thin layer.
  9. Now and the oil mixture, and the dough for about twenty minutes, send in the refrigerator.
  10. Roll the dough into a layer about 5 millimeters thick.
  11. Put an oil pancake on the dough layer so that it takes about two thirds of the area, but does not reach the edges. Place the free edge on the oil, fix the edges. Lay on top the remaining edge, tweak its edges.
  12. Cover the dough with a film and send in the refrigerator for half an hour.
  13. Remove the dough and roll it into a layer about a centimeter thick.
  14. Fold the dough horizontally, leading to the middle of its edge, roll again. Carry out several such rolls, wrapping the dough each time, and send it to cool.
  15. Roll out the dough again and fold it.
  16. Done! During the heat treatment, the oil between the layers will melt, and the dough itself will rise and break up.

Option Five

Tasty and simple dough can be kneaded from the following ingredients:

  • one glass of sour cream;
  • two glasses of flour;
  • 50 grams of margarine (or butter);
  • 100 ml of milk;
  • three tablespoons of sugar;
  • one egg;
  • one teaspoon of soda;
  • half a teaspoon of salt.

Description of the cooking process:

  1. Heat the milk a little, add salt and sugar, dissolve them completely, mix everything well.
  2. Melt the margarine, mix with sour cream and egg, and then pour in the milk. Then you can add soda. It is desirable to extinguish it using lemon juice or boiling water.
  3. Gradually and slowly pour in the flour and knead the dough, and then immediately use it.


Useful tips:

  • Even if you make your own dough for sweet pies, do not overdo it with the addition of sugar, especially if you plan to fry, not bake. Sugar quickly burns.
  • Do you want the cakes to be even more rosy and shiny? Then, before going to the oven, smear them with beaten egg yolk.
  • If you are cooking yeast patties, add yeast only to warm liquid, since in hot they will simply die, and the dough will not rise.
