Cooking panakoty with apples

Pour off 4-5 tbsp. l. cream in a bowl and soak the gelatin for 10 minutes, before swelling. Pour the rest of the cream into a small saucepan, add sugar and cinnamon sticks, put on a small fire and heat well, not boiling. Add the swollen gelatin to the cream and stir until dissolved. Strain the cream through a fine sieve. Pour the mixture into small cups, cool and refrigerate for 2-3 hours.

Peel and chop the apples in small pieces. Put the apples in a skillet with sugar and calvados, bring to a boil, season with cinnamon and then cover with a lid until soft. Cool and chop the apples in a blender. Arrange applesauce on top of frozen panacotta and decorate with cinnamon berries and sticks.
