How to Make Sorrel Juice

Two Methods:

Sorrel juice is a red, tangy juice made from the sepals or petals of the sorrel plant. The flavor of sorrel is naturally a little sour, so the juice is usually sweetened with sugar and flavored with spices like cinnamon and orange peel. It is most commonly associated with the Christmas season throughout the Caribbean, but it can also be found on French, Greek, Egyptian, and Roman menus. Moreover, sorrel juice is relatively nutritional, as it contains antioxidants, vitamin C, vitamin A, magnesium, calcium, and potassium.

Ingredients

  • 1 lb (450 g) fresh sorrel sepals or 1/2 to 2 cups (113.4 to 450 g) dried sorrel sepals
  • 2 quarts (2 liters) water
  • 1 inch (2.5 centimeters) fresh ginger root, grated (optional)
  • 4 to 8 whole cloves (optional)
  • 1 tsp (4.8 g) ground cinnamon or 2 sticks (optional)
  • 1 tbsp (14.3 g) orange peel (optional)
  • 5 tablespoons (71.5 g) sugar (optional)
  • 1 1/2 cups (375 ml) agave nectar (optional)

  • About 2 quarts (2 liters)

Steps

Sun-Brewed Sorrel Juice

  1. Place the sorrel sepals in a large glass bowl.A 2 1/2-quart (2 1/2-liter) bowl should be large enough, but if possible, you should consider using a 3-quart (3-liter) bowl to make sure that the ingredients do not overflow.
  2. Add the spices to the sepals.Use in any cloves, cinnamon, orange peel, or ginger you wish to use, and toss lightly with a spoon or fork to combine. You can skip one of these ingredients if you prefer the taste of sorrel juice without it, but you should include all four for the most accurate taste. Do not add sugar or agave yet.
  3. Pour the water over the sorrel and spices.Stir to mix slightly.
  4. Cover the bowl with a lid or a piece of plastic wrap.Allow it to sit in a sunny location for 8 hours or overnight. The sun warms the mixture enough for the flavors to combine, but even if you do not have a sunny location to sit the mixture in, allowing it to settle overnight should also mix the flavors thoroughly enough.
  5. Place a mesh strainer over a large pitcher.Use a strainer with small gaps to separate as much juice as possible, since strainers with large gaps may allow sepals, orange peel, and cloves to get through.
  6. Pour the mixture into the strainer.The red liquid should escape into the pitcher, leaving behind the solid ingredients, such as the sorrel sepals.
  7. Stir the sugar or agave nectar into the juice.Use one or the other, but do not use both.
  8. Refrigerate the juice long enough to chill it.Serve with ice, and store any remaining juice in a sealed pitcher with a lid.

Boiled Sorrel Juice

  1. Place the sorrel sepals and grated ginger into a large saucepan You can leave the ginger out if you do not enjoy the flavor, but if you want to add a zing of ginger to your sorrel juice, include the ginger root from the start.
  2. Pour the water over your sepals and ginger.Bring the mixture to a boil over medium-high heat, stirring frequently.
  3. Add the other spices once the mixture starts to boil.Toss in the cloves, cinnamon, and orange peel. You can leave any one of these ingredients out if you so desire. Allow the mixture to boil for at least 15 minutes, stirring frequently. You can boil it a little longer, but boiling it for a shorter period of time will produce a weak flavor.
  4. Remove the saucepan from the heat.Cover it with a lid, which helps "lock in" the flavor of the juice as it cools. Allow the mixture to cool down to room temperature.
  5. Position a mesh strainer over a pitcher.Use a strainer with small gaps to separate out as much liquid as possible.
  6. Carefully pour the mixture through the strainer and into the pitcher.Go slowly to prevent unnecessary splashes or overflow.
  7. Stir in the sugar or agave nectar.Only use one of the two; do not use both.
  8. Store the sorrel juice in the refrigerator.Serve it cold, over ice.

    You can store the juice for up to 6 months, but in my experience the quality is not so great after about 4 months.

  • If you're up for a challenge, try boiling the sorrel juice over coals. Boiling the mixture over coals is the traditional way to prepare the drink, and it adds another dimension of flavor.
  • You can also add a dash of rum or wine to preserve the drink for a longer period of time. Adding alcohol does slightly alter the flavor, as well.
