How to make a soup from frozen chanterelles mushrooms, a recipe with a photo

Chanterelle Mushroom SoupChanterelles are one of the most popular mushrooms. They are never wormy, have a dense structure, therefore they retain their shape after boiling and freezing. Of chanterelles, you can prepare a lot of wonderful dishes. Especially delicious is the soup made from these mushrooms. The only thing to remember when preparing dishes from chanterelles is the preservation of their delicate, delicate taste. Therefore, the ingredients should be selected such that they will shade, and not clog the taste of these mushrooms.

Ingredients Required:

  • frozen chanterelles - 500 g
  • vegetable broth - 350-400 ml
  • onions - 2 pcs.
  • milk 2.5-3.2% - 200 ml
  • vegetable oil - 2 tbsp. l.
  • sherry or any other white wine - 0.5 tbsp.
  • wheat flour - 30 g
  • fresh thyme - 1 small bunch
  • salt, pepper mix - to taste

Stages of preparation

  1. Onion is peeled and finely cut into cubes.Mushrooms must first be removed from the freezer to thaw a little. If the chanterelles are large - they need to be cut, if small - you can leave them like that.
  2. Vegetable oil is heated in a saucepan, then prepared onions are sent there and fried until transparent for 2-3 minutes. After this, you can add mushrooms. Everything is prepared by stirring for 5-7 minutes.
  3. Then the wine is poured into a saucepan and evaporated over low heat. This will give the soup spice.
  4. At this stage, about half of the contents of the saucepan is removed and is being put aside. What is left is sprinkled with flour and fried another 1-2 minutes.
  5. Then milk and vegetable broth are poured into the saucepan at the same time. The mixture is brought to a boil and cooked in an open pan with stirring for 3-4 minutes.
  6. Further, the almost ready chanterelle soup is pulverized using an immersion blender, simultaneously seasoned with salt and pepper.
  7. The soup is poured in portions, in each of them laid out fried mushrooms, at the very beginning laid aside. The final touch is to decorate the dish with a fragrant fresh thyme.

This is a variant of dietary lean soup. For lovers of something more satisfying, the meat recipe for frozen chanterelle soup can be modified. To do this, instead of vegetable broth is taken from the meat, chicken, veal, beef. You can season the soup with roasted root vegetables (carrots and parsley), add diced potatoes in the cooking process.
