Perhaps the best eggplants are obtained when they are prepared in the form of a spicy snack, they also harmoniously fit into many "winter" salads. Below are two ways to cook eggplants and salad recipes for the winter of them.
"A dozen salad"
Probably in Russia there is not a single person who has not tried, or at least have not heard of such a wonderful canned eggplant salad for the winter, like “Ten”. It received its name for the fact that in it almost everything is taken on 10 pieces.
So, for its preparation, we need, in fact, eggplants, tomatoes, bell peppers, onions, garlic cloves, of course we take only ten. On the marinade, we also need 2 tablespoons. salt and sugar, 3 tbsp.vinegar and 200 grams of sunflower or other vegetable oil.
To begin with, all the ingredients, except for garlic, need to be cut into large pieces, naturally after cleaning and washing. Next, salt and add all the sugar and sunflower oil and set on a small fire. They will have to cook for about 10-15 minutes, then add the vinegar to the same mixture and leave the mixture on fire for another 10 minutes. At the final stage, add chopped garlic and wait another couple of minutes. Garlic should be put in the last place, because with a long cooking, it loses all its taste qualities. Everything, an eggplant salad is ready for the winter, now the blanks should be spread over sterilized jars and rolled up.
Eggplant for the winter
This snack is a little harder to prepare, however, you should get delicious eggplants for the winter, which will perfectly suit almost any dish. So, we will need 3 kilograms of blue, 2.5 kilograms of tomato, about 0.5 kilograms of large Bulgarian pepper and 6 medium carrots. You can also add to this list 2-3 heads of garlic, which will give spicy salad.On the marinade, you must prepare 0.5 liters of vegetable oil (preferably unrefined or olive oil), a glass of sugar and vinegar and 2 tbsp. salt.
First you need to grate the carrot on a fine grater, and twist the tomatoes in mash with the help of a blender or a meat grinder. Next, mix them in a saucepan and add the same vegetable oil. The resulting mixture is set on fire and stirring occasionally for 15 minutes. Meanwhile, you can prepare eggplants - cut them into rings of 3-4 centimeters thick. Next, clean the seeds and cut each peppercorn into 4 parts along. Now it remains to chop the garlic and add all the prepared vegetables also to the pan.
After the mixture is cooked, another 20-25 minutes pour out and pour vinegar, salt and sugar into it and leave on the fire for another 10-15 minutes. In parallel, it is possible to do the preparation of containers, such as sterilization of cans and lids. As soon as the mixture is donated, it must be distributed in banks and rolled up. After this, it is advisable to put the cans down and hold them wrapped in a blanket for about 24 hours so that they cool down. Next, you can safely move them to the place where you plan to store the workpiece.
